As with all Russulas, the stem of the Shrimp Russula (Russula xerampalina) is brittle like chalk. A young specimen like this can have a red cap, white gills and a white stem with a blush of pink. However, this species is quite variable in color. A spore print will be yellowish. Look for Shrimp Russula under Doug Firs. David Arora says they have an unforgettable nutty flavor - although many close relatives are often full of Fungus Gnat maggots. (The larvae play an important role in turning forest leaf litter into soil.)
